Fragrant Orange Cranbeany Cake

I’ve got another humdinger of a recipe!! After several attempts, I have finally worked out a new Gluten Free cake based on a can of butter beans or cannelloni beans.

If chocolate is not your thing and the Chocolate Magic Bean cake bandwagon passed you by, try this Fragrant Orange Cranbeany cake recipe which is same same but different!!

I have replaced the cocoa with cornflour, and potato starch or tapioca starch. They are all interchangeable in this recipe, so use whatever you have on hand. The legumes are interchangeable too, I use butter beans as they are bigger and cannelloni or lima beans work too. Soy beans and chickpeas do work too but I find the flavour a little overpowering. This cake stays really moist for days, if it will last that long – and as it is full of protein cut small slices as it is quite filling.

Here it is:

1 x 400g can butter beans – drained and rinsed
Rind of 1 orange
80g orange flesh skin amp; pith removed
80g  cornflour, tapioca starch or potato flour or a mix
2 teaspoons baking powder
Pinch of salt
120 g butter, softened
130g sugar
1 1/2tabs coconut flour

2 teas orange flower water (optional)
5 eggs
1 handful of dried cranberries
Mill the sugar, rind & coconut flour for 10 seconds SP 10
Add the butter & 1 egg  and mix for 10 seconds until smooth. SP 5
Add the beans, orange, remaining eggs, cornflour,  orange flower water (if using), baking powder and salt and blend SP 4 15 seconds. It will look slightly curdled at this stage but don’t worry. Stir through a handful of cranberries. Pour batter into prepared pan and bake MOD oven for 35-40 minutes or until a toothpick inserted in the middle comes out moist but clean.

    Wrote a long lovely feedback but WordPress ate it up &&$@&&. Basically the Orange flavor in this is YUM! Your bean cakes are the only way my son would eat protein. Are there any other variation I can try?

    I made this and it’s delicious! I love that citrusy, warm, luscious orange flavor. It didn’t turn out as light as the choc bean cake but maybe it’s coz I used desiccated coconut. But still yum. Thanks! These bean cakes is the only way my son would eat protein!! Any more bean cake variations? 🙂
