Bread is often a contentious issue in the paleo community. I have spent many an hour (and ingredient) experimenting with recipes trying to find the holy grail of “paleofied” bread. I have come to the realisation that there is just nothing that replicates the chewy, yeasty texture of a decent homemade bread and have I stopped trying.

Avoiding certain food groups (ie grain & dairy) comes with sacrifice and bread is one of them. Needless to say, avoiding certain food groups has plenty of benefits too, which is why I do it!! Better sleep,  clearer skin and less bloating, are amongst many of the benefits I enjoy.

But sometimes, whilst indulging in enjoyable recollection, I crave comfort foods like fried rice, chocolate pudding and……Vegemite toast! Find my own homemade “vegemite” recipe here!

This recipe is so quick and easy I make this “bread” fresh to order, which is the best way to eat it anyway. I steam it on my Varoma tray which takes only a few minutes if you use hot water out of the tap.

You can toast it but it does tend to dry out so I would only toast it if I was serving with runny egg or saucy mushrooms.  I prefer it fresh out of the steamer with lashings of melted butter and perhaps, vegemite!

This recipe has replaced my flatbread recipe as my go – to – bread when having a fry up of bacon & eggs on the weekend. The recipe makes a big serve of bread, suitable for 2. The coconut flour makes it very filling. You can divide the recipe in half but I don’t bother – it freezes really well if I don’t scoff the lot in one sitting!

2 eggs
2 level tabs coconut flour
2 tabs almond meal – blanched is better
1 tab macadamia oil

2 teas baking powder
pinch salt

Hand mix all the ingredients in a bowl with a spatula until nice and smooth. Spread a 15cm circle onto a piece of baking paper and place on the upper flat tray of your Varoma. It should be about 4 cm high. Steam for 6 – 7 minutes with 300g very hot water on VAROMA temp SP 4.*

This recipe can very easily be adapted to be sweet or savoury. I use onion powder, garlic powder, sesame seeds & herbs for a savoury bread. Try adding stevia, cinnamon, vanilla or currants for a sweet bread. Yum!

* You can microwave this  on a greased saucer for 50 seconds on high, but I think they turn out much better steamed.

    Please forgive my ignorance but I don’t understand the measurement “tabs” . I’d guess tablespoons but that doesn’t seem like it would be right. Your recipe looks really good and I’d love to try it! Thanks for your help!

      Yes tabs = tablespoons and teas = teaspoons

    How do you make this recipe without a thermomix and done over the stove. Thanks.

      Use a steamer basket over a pot of boiling water and steam for 10 minutes.
