I have been feeling lazy lately. Well,….. tired, really, hence my absence from this blog. Laziness is a disinclination to activity or exertion despite having the ability to do so. It can be pervasive…. and it breeds cravings. So it was from my laziness, one Sunday afternoon, that stemmed this recipe. I wanted cake – but was too impatient to wait for it to bake, so instead of heating the oven, I poured the batter into a frying pan and “baked” it on the stove.

And amazingly, it worked!!! In retrospect, the amount of time I spent working it out, I could have baked this in the oven, but it’s all about the journey isn’t it? It was a good experiment and useful if you don’t want to heat the house up or the oven is broken or you are camping! The secret is to keep the temperature very low so that you don’t burn the bottom and I found using some baking paper was a convenient way of keeping mess to a minimum and it aided with flipping!

Rind of 1 orange
90g rapadura (I used Natvia)
160g almonds
1/2 teaspoon bicarb soda
1 teas baking powder
20g butter
3 eggs
1 teas cornflour (or tapioca flour)
2 tabs orange juice
In a dry bowl, grind the rind on SP 9 for 10 seconds. Add the nuts and sugar and grind again on SP 9 for 5 seconds. Add the rest of the ingredients and mix on SP 6 for 10 seconds, to make a thick batter.
Line a small frying pan with baking paper by crumpling it up and wetting it, then spreading it out. Pour in the batter. Cook on a very low heat, covered until bubbles are just forming on the top. Cut another piece of baking paper and place on top of the “pan – cake” and use a plate to flip it over and replace in the pan.

The process takes about 20 minutes, depending on the thickness of the cake. You may like to add more sweetener if you prefer. After you turn it out, sprinkle the top with orange juice and garnish with sliced orange. This is best served warm, especially YUMMY served with yoghurt or dairy free Paleo cream – recipe soon.

    Going to surprise my husband next time we are off on a camping trip with the Thermomix
