Creamy icy cold eggnog!

It’s way too hot to have traditional eggnog here in sunny Queensland but an iced version might be a festive way to start your day on the 25th!

This works well warm too if you are so inclined, perhaps a nightcap on Christmas eve….

My kids have outgrown the pre-dawn rising and present opening, being teenagers, they have learnt to value their morning sleep!  How do you start your Christmas Day?

 600g milk (dairy, nut or coconut)
2 eggs
100g sugar
100g cream
40g dark rum or liqueur
30g brandy
1 teaspoon vanilla
Pinch of nutmeg
1 teas honey (optional)
Insert the butterfly and add all ingredients to the TM and cook on 70⁰C, SP 4 for 8 minutes. Remove from TM immediately as it will continue to cook. If drinking warm, it is ready to serve but if you are drinking it cold, pour into a jar and refrigerate.
When ready to serve, blitz on SP 8 with 150g ice and serve straight away!
I am going to do an icecream version of this made with hazelnut milk to serve with my Christmas pudding on the day. Just freeze into ice cube trays and then churn on SP 9 for 30 seconds!
