When is a salad dressing a theatre act?

Creamy Dairy free avocado dressing

I first came upon this dressing while trawling a favorite paleo site and wondered, what an unusual name for a salad dressing! Yes it is green but Goddess? Hmmm… not sure…?? A Californian invention from the 1920’s, this dressing was actually named after a play and is based on mayonnaise, cream and herbs.

This version, adapted from Marks Daily Apple is dairy free, egg free and full of good fats. Whilst not actually a guacamole, I have increased the avocado ration to make a thicker sauce. We had it served with a Roast Tomato Tart for lunch on Sunday and it was very YUMMY!

It’s funny how fashions can be defined by their locality. Here in Australia, we don’t have Green Goddess dressing like we don’t have Ranch dressing. We are often confined to the ubiquitous vinaigrette, Italian dressing or plain old Mayo!

With the low-fat movement, poor salad dressing has had a bit of a battering. Commercial dressings have been doctored and messed with to produce a no fat version and are full of gums and additives and sugar to make them palatable.

Personally, I do like a plain old slug of olive oil and douse of lemon juice to my salad but admit that I am a sucker for a good aioli too! This salad dressing works well with a tuna salad dressing or egg salad – I’m sure that you will find any number of recipe applications for it!!

1 ripe avocado (I used 1.5 for a thicker sauce)
70g coconut milk (or cream)
Juice of 1 lemon
1 clove garlic
4 anchovy fillets
a handful of fresh parsley
a handful of fresh dill
1 teas capers (optional)
50g olive oil
1 tab apple cider vinegar
Salt & pepper to taste
Put everything into the TM (or food processor) and blend on SP 7 until smooth.
