Pancakes with a Punch!
Please be patient with me! I have been a bit tunnel visioned lately having been inspired by my recent recipe of protein powder! As I continue to stay grain free, dairy free and soy free (and still pretend to have some normality in my diet!) I have been doing a lot of experimenting with my protein powder and have come up with a few goodies – with a lot of trial & error along the way!!
These pancakes are a really good grain free substitute, as long as you don’t over cook them! Protein powder can notoriously dry things out when over cooked, resulting in a rubbery, leathery mess that will sit in your stomach like a lead balloon. The addition of fat is imperative, feel free to add more, perhaps using almond butter instead, but I didn’t have any on hand. This recipe makes 4 medium pancakes, 2 of which are perfect for Miss Piggy like me who can eat them up and know I am getting a 30g protein hit and only 240 calories to boot!!
2 tab protein powder – plain or vanilla 1 tab coconut flour (or almond) 1 rounded teas baking powder 1/2 teas psyllium (optional) 2 teas coconut butter, butter or almond butter 2 eggs pinch salt pinch cinnamon 2 teas sweetener or sugar a dash of water Mix all ingredients and let sit for 5 minutes for the coconut flour to swell. Add a little water to make a good batter consistency. Pan fry over a medium heat and flip when bubbles appear. Serve with your favourite topping or my raw strawberry jam or omit the sweetener and serve with bacon & eggs!!
