Indian inspired Carrot & Coconut Salad

Don’t be fooled by the mediocre look of this simple salad – it needs to be tasted to be appreciated!

I was looking at some fresh coconuts this morning at the greengrocers, weighing up the heaviest and most “sloshful” sounding nut, when the grocer himself, offered me a “special” one from out the back. “What is different about this, one compared to these ones?” I asked pointing to the shelf.

“Oh those ones are fine, but I can see you are looking for one with plenty of coconut water, and this one is fresher” was the reply. Gratefully accepted, my coconut and I went home to play..

My really fresh coconut had 580mls of antioxidant laden coconut water – that’s a great yield!

The older the coconut, the less water it has, and also, the thinner the meat will be. I also discovered that a really fresh coconut will be much easier to peel, than an older one,  I did this one in less than 5 minutes.

I have frozen half of the water to use in a Vietnamese dish and will add the rest to my morning smoothie for an extra hit of electrolytes and potassium.

As for the flesh, try this super easy simple Indian salad – it is great!!

60g cooked quinoa or sunflower seeds (soaked for 1 hour)
250g carrot
120g fresh coconut meat
1/4 teas ground coriander
1 tab coconut oil
1 teas mustard seeds
1 dried chilli
juice of 1 large lemon
1 teas salt
dried chilli flakes to taste
Heat the oil in a saucepan and fry the mustard seeds & chilli till they start to pop. Remove from heat and add the salt, coriander & lemon juice. Set aside to cool.
In the TM bowl, add the carrot & coconut and chop for 5 seconds on SP 6 or until the desired consistency. Add the quinoa or sunflower seeds. Stir through the dressing and season to taste.
Serve at room temperature.

You can use desiccated coconut for this recipe but it will have quite a different flavour. Fresh is best. If you do substitute desiccated for fresh use 30g which has been soaked for 30 minutes in warm water.
