Paleo Banana & Date cake

A friend asked me a few weeks ago to convert a recipe from the Thermomix recipe community website to suit her paleo diet and I was happy to oblige. The original recipe was  wholemeal banana & date muffins  and had the usual ingredients, flour, sugar, bananas etc, but my friend cannot have sugar or grain. She produced a lovely moist rendition and I was so chuffed that she bought me a sample to try. I love it when people share their kitchen experiments with me as I feel I am always forcing my experiments on everyone else!!

Anyway, here is the result. Its lovely and moist and has a really good texture, omit the walnuts if you like. We used xylitol which is not very paleo but still low carb. I always like to use a xylitol/stevia combination as it seems to emulate the taste of real sugar in a much better way. See what you think..

100g dates
35g xylitol
3 drops of stevia (optional)
2 bananas
4 eggs
100g butter
40g coconut flour
1 teas bicarb
1 teas baking powder
1/2 teas cinnamon
1 tab arrowroot or potato flour
40g walnuts
100g nut milk, cream or water
Mill the dates with the sugar on SP 10 for 10 seconds. Add the banana, butter, eggs, bicarb, baking powder & cinnamon and mix for 10 seconds, SP 8.
Add the flours & walnuts & milk and mix on SP 5, 5 seconds until combined. Bake in a moderate SLOW oven for 30 minutes.

    Oh wow this looks wonderful!!! I think i’d probably opt for coconut sugar as a low GI replacement for the xylitol. My tummy doesn’t like that sweetener for some reason

      Thats a great idea, you could use rapadura also!

    I wonder what it would be like without the xylitol/stevia? Just thinking that with the dates and banana it would possibly be sweet enough anyway? Or perhaps it would be more like a banana/date bread then?
