Macadamia "cheese" & fresh tomato on crackers (Thank you Kyle B for the pic!)

Thank you to Jo from Quirky Cooking who posted this recipe on her blog today! I was so inspired that I jumped up, yes, jumped up and rummaged through my cupboards to make this Macadamia “cheese”.

Just pulse the ingredients to the desired consistency. I did mine quite chunky but you can make it quite smooth if you wish. Jo likes to sprinkle hers through risotto – sprinkled over pasta or salad would be yummy too. I served what I made on biscuits and they were gone in a flash! Next time I am going to add some herbs, perhaps some rosemary or dill.

160g raw macadamia nuts
1 heaped tab nutritional yeast
1 teas salt
1 tab lemon juice
Pulse in the TM on SP 6 until you get desired consistency

    I add a little onion and lime juice to mine ! 😉
