Nuthin like a Muffin…
Now that I had a jar of coconut butter in the pantry, what to do with it?
A quick search through the pantry yielded not much except for a few apples & mixed fruit so I thought I would put together a simple muffin mix, and healthy to boot! The recipe uses coconut flour and it can be made solely on coconut flour if you are gluten intolerant. To substitute, increase the quantity of coconut flour to 40g and double the bicarb. If you don’t have any coconut flour on hand, use 160g SR flour.
Apple & Coconut Muffins 100g coconut butter or butter or oil or a mix 150g sugar 2 eggs 100g milk (or nut milk) 2 apples 120g SR flour 20g coconut flour 30g coconut ½ teas bicarb ½ teas cinnamon ½ teas nutmeg 80g sultana or walnuts (optional) Mill the sugar on SP 10, 10 seconds. Add butter & eggs and mix on SP 6 for 10 seconds. Add milk, apple, coconut flour, bicarb & spices and mix SP 5 10 seconds . Add SR flour, coconut and sultanas (if using) and mix SP 4, 1 second and repeat. Bake in a 180⁰C mod oven for 25 mins.It’s very important not to overwork the flour and that’s why I mix it in at the end in 1 second bursts. I baked half of this mix one day and then refrigerated the remaining batter for the next day and it worked a treat. Next time I am going to freeze the batter in portions (paper cupcake pans) and then defrost to cook as required. I’ll keep you informed!
Sarah – a fabulous muffin recipe! Just delicious and the only one that has worked for me so far. I think your method of mixing the flour in 1 sec bursts is the key. Janet

How did you prepare the apple first ? Does it need additional peeling or grating ?

I just halved the apple and threw it in. It gets minced pretty finely in the batter.
