Broccoli Salad
oooh, I am sooo loving this salad at the moment….
I have to admit that I do get fixated on a dish and eat it over & over until it dies a natural death, but this salad is sooooo good for you. I often have it for lunch with a cold boiled egg or half a can of tuna. It keeps well for 2 days but is best eaten on the day.
Full of vitamin C rich broccoli, this salad is made in 5 seconds, be careful not to over process or you will have puree! Broccoli is reputed to have anti-viral, anti-bacterial and anti-cancer properties and is also an excellent source of indole-3-carbinol, a chemical which boosts DNA repair in cells. (Wikipedia)
This recipe is based on the one in the Thermomix Everyday cookbook with a few additions. I like to add a small handful of currants & pepitas for crunch, it really is adaptable to how you like it.
200g broccoli 1 handful parsley 1 spring onion, sliced 1 small zucchini 1 small small carrot 1 apple (I often use 1/2) 100g plain yoghurt 1 tab mayo or salad dressing Juice of 1 lemon Salt & pepper to taste 1 tab currants 1 tab pepitas + more for garnish Put all ingredients into the TM bowl and mix on SP 4 for 5 – 10 seconds until desired consistency. Use the spatula to stir if neccesary.
Hi, is there any alternative to the yoghurt?
You could use mayo or sunflower dressing instead.
