Pancake Tuesday

OK, so it’s Wednesday…., ooops! Every year, without fail, I remember Pancake Tuesday on Ash Wednesday.
So when Master 12 slams through the door at 3.05pm, “whats to eat?” there are pancakes, or pikelets awaiting.
Unbeknownst to him, this recipe is Paleo friendly. Made on coconut flour and bananas & eggs, it is very protein rich and filling, just what Master 12 needs. As you can see from the photo, they colour VERY quickly so cook them on a low heat.
2 bananas 5 eggs 50g coconut flour 40g milk or nut milk 3/4 teas bicarb soda 1 teas rapadura sugar or honey (optional) 1 pinch xantham gum (optional) Put all the ingredients into the Thermomix bowl and wizz up for 10 seconds on SP 6. Check for consistency and pan fry in butter!

This is a great recipe, I’m going to try it on the weekend. Is coconut flour gluten free, I think probs, but thought best to check?
Yes, Susan this is gluten free. Don’t be alarmed at the small amount of flour as coconut absorbs a lot of liquid. Let me know how they turn out.
