Another great bake off..

Thank you Ladies, for making my bake class such fun! With a small group it is lovely to get to know one another.

This week at the “Let’s Bake” class we made rich Shortcrust Pastry, Poached Pears (- yes, in the TM!), a Pear and Almond Frangipane Tart, Cappuccino Sorbet, Quick Mix Anzac Biscuits, and Chocolate Chip Banana Cake.

This cake is a hot favourite in my house and since I have been limiting my sugar and wheat, it has been sadly missed amongst the hoards! The recipe has almost equal amounts of chocolate to flour; a fact I was in quite denial about when I used to devour it warm from the oven! It is also very very good cold and keeps well if it lasts that long!

With or without a Thermomix, the Chocolate Chip Banana cake is incredible easy to make – simply a wet & dry method and is done in minutes. I made individual patty cakes in the class for speed of cooking, but normally I would do this in a loaf (or bar) pan and cook for 40mins. The cupcakes took 20 minutes to bake.

A temptation hard to resist!

260g bananas or 3 medium
250g milk                                                                            
100g melted butter
2 eggs
1 teas bi carb
320g SR flour
300g choc bits
150g brown sugar                                                                           
50g coconut

 Melt butter on SP 3, 60⁰C for 2 mins. Add milk, eggs, banana & bicarb and mix on SP 4, 5 seconds. Add sugar, coconut & chocolate and mix further 3 seconds. Add flour and briefly mix until JUST incorporated.

Bake mod oven for 40 – 45 mins. Best served warm but is still yummy cold.

You can substitute coconut butter or oil for the butter and nut milk for milk to make this dairy free. If you are going to use 70% dark chocolate, I would reduce the amount to 200g otherwise you will be bouncing off the walls!!!

    Hi, I made this fabulous cake for my family, and my son just cant get enough of it. The 14year old boy grunted “great cake”. There is no higher praise!

      Hi Susan, Glad you loved it! Did you have it warm out of the oven? A truly sinful experience… It is always a hit, no matter who you give it to…and… had the added healthiness of the banana…..who am I kidding?!!
