Missing in Action: Pizza

I am not on a Paleo diet. I am merely following its principles for a little while to see what all the hype is about.

Yes, I was addicted to sugar, and yes, I have made a supreme effort to give it up, but lets just say, like this blog, it’s a work in progress..

So I have dispensed with the shiny white stuff but found that the bigger hurdle was giving up the other refined white stuff: grain. For someone who loves homemade woodfired pizza or an artisan sourdough, this has been my major grievance. So, after a month of no pizza, the boys are complaining!!

I made a NORMAL pizza dough for them:

with waaaay too much cheese, and a paleo version for me!

This proved difficult. Anyone who has made a grainfree bread will tell you that the dough is very wet & hard to handle. There is nothing in it that will stick it together! It is more like a thick batter and the end result is something of a “cakey” consistency. Flavourful, yes; nutritious, very; but bread like, nada…

So I started out with my grainfree recipe which is based on Quirky Jo’s  Pecan Bread recipe and it looked like this.

Obviously, I was not going to be able to roll this out, so I made it wetter and grilled it like a thick dosa.

The result was OK, passable, I will persevere. There will come a time when I will stop kidding myself and realise that it will never compare to the real thing, but I can only keep trying for now. As for my grainfree bread recipe, I’ll keep you posted!
