Chocolate zucchini cake

Here is a pic of the cake we made in yesterdays class. This recipe only just squeezed into the healthy class because it has zucchini and raw cacao included! I have just noticed that my recent entries have a bit of a chocolate slant. Perhaps this is because I am on day 27 of being sugar free!!! Anyway, here is the recipe:


110 g                      butter

150g                      sugar

2                              eggs

70g                         rum, brandy or whisky

2                             zucchini

160g                       SR flour

50g                         cocoa

½  teas                  bicarb

½  teas                  cinnamon

125g                       choc bits

30g                         milk

80g                         walnuts                (optional)

Cream butter & sugar on SP 6 for 20 seconds while adding eggs one at a time. Add  rum & zucchini, cocoa, bicarb, cinnamon and mix SP 5 10 seconds . Add flour & choc bits (and nuts if using) and mix SP 4, 1 second and repeat. Its important NOT to work the flour. Bake in a 180⁰C mod oven for 35 mins in a loaf pan or 15minutes as cupcakes.
